Cherry Popovers

Ingredients
- 4 eggs
- 1 ½ cups milk
- ¾ teaspoon salt
- 1 ½ cups unbleached all-purpose flour
- 3 tablespoons butter melted, plus more for topping
- Chukar® Bing Cherry Preserves
- Chukar® Sour Cherry Preserves
Directions
- Preheat oven to 450°F. Position a rack on lower shelf so that popover tops don’t burn.
- Use a standard 12-cup metal muffin tin. Grease the pan thoroughly, covering the area between the cups as well as the inside of the cups.
- Use a wire whisk or a stand mixer with whisk attachment to beat together the eggs, milk, and salt. Whisk until the eggs and milk are well combined and very foamy, with no streaks of yolk showing.
- Add the flour all at once and beat until frothy; there shouldn’t be any large lumps in the batter. Stir in the melted butter. Pour the batter in the muffin cups until they are ¾ full.
- Place pan in a 450°F oven on the lower shelf. Bake for 20 minutes, reduce heat to 350°F and bake for an additional 10 to 15 minutes, until popovers are a deep, golden brown. If the popovers seem to be browning too quickly, position an oven rack with a cookie sheet on it above the popovers to shield from heat.
- Remove from oven and let cool.
- Top popovers with butter and your choice of Chukar® Bing Cherry Preserves or Sour Cherry Preserves.
