Cherry Pie Bars

Ingredients

  • Bars:
  • 2 sticks unsalted butter, softened at room temperature
  • 1 ¼ cups granulated sugar
  • 1 egg
  • 2 ½ cups all-purpose flour
  • ½ cup old-fashioned oats
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 ½ cups (1 jar) Chukar® Sour Cherry Pie Filling
  • Icing:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon almond extract

Directions

  1. Bars:
  2. Preheat the oven to 350°F. Grease a 9x13-inch baking pan. Line the pan with parchment paper.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 3 minutes. Mix in the egg.
  4. In a small bowl whisk together the flour, oats, baking soda, baking powder, and salt. Gradually mix the dry ingredients into the creamed mixture until the dough comes together.
  5. Reserve 1/2 cup of the dough and press the remaining dough into an even layer in the baking pan. Spread the Chukar® Sour Cherry Pie Filling on top.
  6. Break the remaining 1/2 cup of dough up into small pieces and sprinkle it evenly on top of the pie filling. Bake the cherry pie bars for 30 to 35 minutes until the top is lightly golden. Allow the bars to cool and set in the baking pan (at least one hour) before slicing and serving.
  7. Icing:
  8. In a bowl, whisk together the powdered sugar, milk, and almond extract until smooth. Drizzle over the cooled pie bars.

    I saw your recipe for cherry bars and decided to make them for Thanksgiving dessert. The recipe calls for one jar of your sweet cherries but we all LOVE cherries and one jar isn’t enough. I bought the jar of triple cherries and a jar of the sour cherries. I mixed them together in a bowl. Then I followed the recipe exactly. Let me tell you, the compliments kept coming! Everyone loved them. Thank you for not only a great tasting product but also the recipes that showcase your cherries. I don’t plan to ever lose this recipe.

    These were easy to make and beyond scrumptious. I made only half the recipe, which is plenty for two people. Now if we want cherry pie, we don't have to roll out crusts with all the mess that tends to entail.
