Chukar Cherry Cheesecake

Ingredients

  • Nonstick cooking spray
  • 8 low-fat graham crackers
  • 1 tablespoon oil
  • 3 cups low-fat (1%) cottage cheese
  • 8 ounces cream cheese, at room temperature
  • ¾ cup + 2 teaspoons sugar
  • ½ cup sour cream
  • 4 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • Chukar® Cherries Jubilee

Directions

  1. Coat spring form pan thoroughly with cooking spray and preheat oven to 325°F.
  2. Crush graham crackers into fine crumbs.
  3. Mix in 1 tablespoon oil and press firmly into the bottom of spring form pan.
  4. Bake 15 minutes.
  5. While crust is browning, mix together cottage cheese and cream cheese in a food processor until smooth.
  6. Mix in sugar, sour cream, eggs, flour, vanilla, and salt and blend well.
  7. Pour cream cheese mixture into warm crust and bake 1 hour (until center is set).
  8. Let the cheesecake sit in turned-off oven for an hour before cooling on a baking rack. Once the cheesecake has reached room temperature, refrigerate at least 3 hours.
  9. Top with Chukar® Cherries Jubilee and serve.
