How We Make Our Chocolate Cherries

For over 30 years, we've been making our chocolates the same way: in small batches using naturally dried Northwest cherries that are hand-drizzled with European chocolate in copper kettles.

We'd love to show you a quick behind-the-scenes video at how we make our beloved chocolate covered cherries right here at our Eastern Washington headquarters.

We start with the highest quality Northwest Bing, Rainier, and tart cherries cherries that are harvested at peak ripeness and immediately brought to our facility to be washed and put through our patented drying process.

Using warm air to dry cherries preserves all of their flavor and natural sweetness, as well as moisture. Our dried cherries contain no added sugar, preservatives, or sulfites.

Next, we take the dried cherries to our Chocolate Room where we house our old fashioned copper kettles. These kettles allow us to hand-drizzle chocolate over the dried cherries, one delicate layer after another. We believe that the use of these time-tested methods produces the best chocolate confections.

After a quick polish and drying, the chocolates are are taken next door to be assembled into our many chocolate cherry gifts. From chocolate cherry assortments to gift tins, the chocolates are packaged up to delight! We also specialize in chocolate berries and chocolate nuts, such as our beloved Honey Pecans.

Every chocolate cherry you purchase is made within two weeks of being shipped. This guarantees exceptional flavor and quality. Using just-in-time manufacturing allows us to always ship the freshest, most delicious product.
